Protein Waffle Recipe ~ Cottage Cheese, Oatmeal & Eggs *SO EASY!

BLENDER PROTEIN WAFFLES


Serves 3
Ingredients:
1/2 cup cottage cheese
2 eggs
1/2 cup water
2 teaspoon olive oil
1 teaspoon vanilla extract
1 1/3 cup oatmeal, regular
1 teaspoon baking powder
1/2 tsp baking soda 
Instructions:
Put everything in a blender and process until blended well.
In a food processor, blend cottage cheese, eggs, water, vanilla, and olive oil until smooth.
Heat waffle iron until hot. Spray with cooking spray. Pour in one third of the batter (if using a Belgium waffle maker you will need more) Cook until they are a little more golden and toasty. I prefer them to have a crunch vs being soft. 
Makes 3 waffles - 1 serving is 1 waffle
I love to top mine with a few thin slices of banana, a few chopped walnuts and 2 tablespoons of maple syrup.

Healthy Split Pea Soup & Ham Soup - Pressure Cooker (InstaPot) Recipe
My family LOVED this soup. The hubby went completely gaga over it and let me tell you...it was SOOOOO easy to make. Like crazy easy! It has so much flavor too.
Modified this from the original recipe found on SkinnyTaste.com
Ingredients
  • 1 tsp olive oil
  • 2 large carrots, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced or 2 tsp prepared minced garlic
  • 1 reduced sodium ham steak, diced 
  • 4 cups beef stock or broth
  • 2 cups water (or you can use 6 cups of water and 1 bullion cube or 1 tbsp better than bullion chicken or beef stock)
  • 1 lb dry green split peas, rinsed well
  • 1 bay leaf
  • a few twists fresh pepper

  • *salt goes in after you cook it - approx. 1 tsp salt (taste it then you can add more if you like)

    In a pressure cooker, place settings on saute; heat oil - Add onions and carrots and saute 4-5 minutes; add garlic saute a min or so more. Add ham, peas, stock & water or just water with the bullion, and bay leaf and bring to a boil. When the liquid boils, cover and lock the lid. Press cancel on the Instapot pressure cooker. Press soup and reduce time to 20 minutes. Allow the pressure cooker to naturally release the steam for about 10 minutes after it's done.

    Once done cooking, remove bay leaf, add a teaspoon of salt and enjoy! 

    *I put about 1/3 of the soup into a blender to make it creamer. This is optional.
    *Another variation would be to use all chicken stock or broth. It is very flexible.

Lunch at the Vault in Savannah, Georgia


My friend, Christan and I, decided to check out this cool newer downtown restaurant for lunch one day and I fell in love. The food was divine, service was great and the place has a really eclectic but casual feel. Would make for a great date night on the patio too. They were willing to customize the menu so I could have seared ahi on my salad. We enjoyed a glass of wine too :) I will be going back. I highly recommend them. The salad was around $17 but that's not too bad for Ahi Tuna and fresh ingredients. The salad dressing was also really good. I was able to sample all of them. If you find yourself in the downtown area, but don't want to be near river street, they do have a private parking lot.

My Struggle With Anxiety And Depression 

I have been fighting this disease for a long time. The worry that people might not understand me; might judge me; might not want to work with me because of my struggles. The fear that I cannot emotionally handle other people who are broken and hurting because i feel so deeply that it cuts me to the core and i want to help them or it breaks me down too. I have been fighting this feeling inside that God has put this suffering of depression and anxiety in me so that I can show others that there can be happiness and hope and LIFE through the pain through the dark days, through the dark thoughts through the tears through the tightness in your chest when you go somewhere new or when you are so worried about what others think that it paralyzes you inside and you just stay home.



I know that pain. I know that fear. I LOVE people and I love having fun but my anxiety keeps me from being who I know I was meant to be. But, this business has pushed me so far outside my comfort zone and forced me to talk to people and engage in life in such a way that i finally feel complete. I love my Beachbody family and they accept me. Not everyone but i found my tribe of people who love me for me. In our network there is training that talks about your niche and who do you want to attract so you can work with those people.

For so long I wanted to attract those who were like me 5 years ago. So broken inside they wanted to die, but then I got tired of dealing with the hopelessness, the lack of belief, the lack of commitment even though I understood what they were dealing with it became too much and I just wanted to deal with more normal people. I let go of my true passion which was helping those who are hurting. Helping the Jennifer's of 5 years ago. The military wives who lost theirselves and their identities. Who became their husbands social security number. Who gave up their careers and lives to follow their husbands and became stay at home moms. They love their kids but have so much resentment inside because they feel lost and trapped. They feel unfulfilled and guilty about how they feel. They want more but don't know how to achieve it. Those are my people. That is my passion! I want to help those women who have given up on their careers and their goals and are crying out to God to help them find a way to bring in extra income to help pay the bills. Not only to help take the pressure of their husbands but to feel like they are giving back financially and making a difference in the world. Those are my people!

I am finally opening up and letting the world in. Letting go of the fear of judgement from others and boldly saying I am broken but I am living now even with my struggles and I am giving back! Most days are fine but simple tasks like making a doctors appointment for my kids makes my chest tighten up and overwhelms me. I tend to push it off and procrastinate which then makes me feel guilty because I know I am neglecting what I should do as a parent. Eventually I do what needs to be done. Eventually I push myself to go to the store but its very hard and I am very content to stay in my safe bubble but very lonely there. Simple things like having family visit can throw me into complete panic and overwhelm if I am not careful. I have to have time to process it and plan ahead or I will fall apart. I feel so stupid when these things happen because I know others don't struggle like this, but I do. I know what I can and cannot handle now that I am almost 40 and I am finally learning that is who I am and I am the only person who can protect me. It is okay if others don't believe it or understand. All I can control is me and do the best I can at keeping my shit together and not loosing it.

I used to be very active in church but the anxiety was still very much there. The worry that others were judging which they probably were. The paranoia of what to wear and how do I look and what do others think of me made me awkward in social settings but the part of me that wanted so badly to fit in and have fun felt isolated and alone. Church should be a welcoming place but it feels like its the most judged place there is honestly. What amazes me is seeing how God doesn't have to just use you in church. He will use you in the marketplace or wherever you are. Even as a stay at home mom, he is using you to raise up your children and they are watching you. They are learning from you. Even when you feel like you are a total screw up they are proud of you and idolize you. You are their momma.

I realize most people don't feel this way inside and don't worry about what others think, but I know there are a lot of people who do have deep roots of anxiety and depression and they feed off each other because of guilt. Knowing you have everything to be happy about yet you just aren't. You struggle with what to do because you want to live but don't want to be anxious so you stay home. Crying for absolutely no reason and feeling so guilty about it. Not wanting anyone around because you know you are sad, but feeling so lonely you just want someone to hold you. It is such a vicious cycle.

What I love is that this business that was shared with me over 4 years ago came at just the right time. My husband was deployed and I was a complete train wreck inside but had a smile on the outside for the world because they wouldn't understand. This business has stretched me, grown me, empowered me to believe in myself, to go to events, to travel, to engage and have an amazing time and push through the anxiety. I do my best to always make others feel loved and welcome so they never have to feel rejection and isolation. I want them to feel welcome.

As I write this I am doing really well managing my depression with working out daily and I surround myself with an encouraging network of like minded women; but, there are still days that come especially when really big stressful things happen. Maybe someone says something that hurts really bad and that just repeats over and over in your head and you just bash yourself for it. You focus on the negative even though you know you need to stop and remind yourself its not true. That you are worthy. That you are loved. That you are not those mean things that person said. It's a mental battle. Or when life throws a curveball and you feel so overwhelmed that you just cant even function. You are overwhelmed so instead of starting and taking care of it you just completely shut down and have an emotional break down. Thus feeling guilty because you know you need to stop the negative cycle but you can't. It's like you are walking a tight rope in life and the smallest thing can knock you off and you have to fight so much harder than the average person to get back up and get back on the tightrope. You are afraid to fight because you don't want to be hurt and you don't want to fall off again. You push people away and put up walls because you just cant take the pain of rejection and conflict because regular life is already overwhelming you and someone needing something from you is that one thing that makes you lose balance and you fall off again. You don't want to let the pain in so you use anger to protect yourself. You shut people who love you out because they are often the ones who can hurt you the most. They don't mean to do it, but we are so emotional and delicate yet on the outside i pretend to be strong and in control.

I am part of a community that has changed my whole world and given me purpose and hope and I would love to share it with you. I don't have it all together. I don't have the secret to live, but I do have more hope now and more joy than I ever have and I would love to share it with you. I do love my job and I love helping empower women to find themselves again and feel like they are a part of something amazing. I am good at what I do. I have to work harder because of these emotional struggles, but it's what makes me ME. My suffering has helped me to understand others who struggle too and so many struggle due to stress now. You don't have to do it alone.

And for those who don't understand and think I should take medication for the anxiety, trust me I have. If I felt they were helpful I would but they have all caused other issues like made me tired, made me a zombie, made me more crazy haha! etc. For now, I choose to be the best I can be and work through it on my own.

Clean Eating BBQ Sauce Recipe - Core De Force BBQ Sauce Recipe

This is so good over some chopped grilled chicken breast and 1/4 or 1/2 baked sweet potato. Check out the picture at the bottom of the post.



Clean Eating BBQ Sauce Recipe 


1/2 cup tomato paste - no sugar, or if you can't find that use one with no salt
2 tbsp apple cider vinegar
1/4 cup worsteshire sauce
1/2 cup water
1/4 tsp sea salt or pink salt
1/8 tsp pepper or a few twists fresh black pepper
2 tbsp maple syrup
1/4 tsp garlic powder
1/4 tsp onion powder

Combine all ingredients into a jar and shake well. It will be very thin. If you want to thicken it up, put it in a small sauce pan and simmer for about 20 minutes to reduce water. You could also just add 1/4 cup of water to speed this up.

Marcie is such an inspiration. She has come so far and I just love her! This is her testimony....

"16 months ago, I was at my whits end. This disease called type 2 diabetes had me laid up on the couch and in the bed sleeping for hours on end. I couldn't even walk across the house without being out of breath. How was I to go to the mailbox? Grocery shopping for my family was horrid and doing the household chores forget it. I felt helpless and hopeless. This made it worse and I would just stuff my feelings with more food. Which in turn, you guessed it made it worse still.

My a1c [blood sugar level] was a 9.8 I was on two different diabetic medicines twice a day and on 36 units of insulin. I was well on my way to getting it increased. I had a 5 inch notebook full of diets and I had tried them all. I tried everything!!!! Nothing worked.

Then I was invited for the 20th time to join a group of wonderful women who actually cared about my health and well being. I finally decided to sign up. But I was thinking to myself this isn't going to work. Nothing else did.

But there is a light at the end of the tunnel. They did do what they said they would do. They did care about me and my health. They gave me advice and guided me, and most of all, they held me accountable. With in 3 months my a1c was a 6.8. My doctor said that he never had anybody to do that before. And the program and shake that I was doing he knew all about it and said that it was a true miracle.

Fast forward to now I am still working on me and I am off insulin and one of the diabetic pills. I am so close to my goal of being total diabetic pills free, and I decided to be a coach too because helping people matter to me. You too can get these kind of results.

Our 2016 Beachbody Cruise We Earned on The Royal Caribbean Oasis Of The Seas

In March, the hubby and myself drove down to Port Canaveral and boarded the Royal Caribbean Oasis Of The Seas. This boat was HUGE! I mean, WOWZERS! The best part was getting to vacation with so many of my fellow coworkers and know that we earned this trip for FREE plus we earned an added $600 in cash to use how we wanted on the trip, or we could have just pocketed it. We chose to spend it! :)


We got up and did our workout before we headed out for the ship. Then hopped on the shuttle from the hotel. I was so excited. Can you tell?

Our boat is on the right. Its way bigger than the others and it was FULL of Coaches and their guests.
  

There was a HUGE banner on the side of the boat welcoming us Coaches. It was so cool!!! I still can't believe we filled up one of the largest cruise ships in the world. That is insane!

 




Onboarding took a little longer than expected. They had us sitting in a waiting area for quite a while. Maybe a few hours. Apparently a cruise employee was tired and threatened to jump off the ship. You just can't make this stuff up people. It wouldn't have been so bad if I would have had a drink in my had. Haha ;) Once we got on, we got our drink packages and the fun began! We stopped at this cool bar/lounge, Bolero's, and ordered a coconut mojito (amazing!!) and a shot of Patron of coarse. 

 

 

After our first drink, we were able to head to our room and drop off our carry on bags and stuff then we went out on a look out point to take a few photos. 



This was the first night where we refused to go to sleep. My party girl Layla Edwards keeping me company. Ha! We sure regretted that decision when they started the 5:30 am workouts on the deck. I could hear it from our room because we had a balcony room that was close to the top deck. Lesson learned! Never again will I get a room on an upper deck on a Beachbody Cruise. I like my sleep darn it. 
Heading over on the ferry. They had me sit on this ledge. Not sure why, but it had a great view!

 





First stop was The Bahamas. Man that water is just insanely blue! Blows my mind. Jason and I decided to venture out by ourselves this day and we took the water ferry over to the Island that Atlantis is on (i forget the name) and as we were walking there and had no idea where we were going, we ended up in the Atlantis MARINA! I was in rich people yacht shock. We weren't supposed to be in this area, but didn't realize it and just acted like we knew what we were doing. No one said anything to us as we just secretly drooled all over these boats. I mean manshions on the water. I mean seriously, these boats had crews on them. They had boats on boats. Absolutely mind blowing. We saw several boats that had people on them and I wanted to know what they did to have that boat so badly. Haha :) But, I wasn't about to go ask them.

So, then we found our way into the hotel and we walked around taking in some of the aquariums and the casino. I had been there before with friends, but Jason had not, so I was showing him around. We somehow ended up walking onto the resort grounds and I am almost positive we weren't supposed to be there. Oops! Breaking the rules :) That's me. Sneaky sneaky. Ha! So we ended up on this small beach on the property, found some resort towels and relaxed for a bit before heading back to the ship. I would love to vacation there someday. #Goals 


Crazy night when they had a big dance party outside. We had to defend our seating area cause peeps kept trying to steal our spots Ha! 

 

 70's night was a blast! Sad that I didn't a better photo of us that night. I liked my black jumper :)  It was really cool!












We stopped in Jamaica and all of us shared a bus to this beach and hung out for the day. Most of these are Coaches I have grown along side over the last 4 years. They are amazing and we always have so much fun together.



 His happy place. Always eating. Haha! The food wasn't that great, but it was free so I can't complain too much. I felt like Carnival Cruises were more fun and the food is better too. 




 Of coarse since it was a business trip, we had some training and some new product announcements which was AWESOME! It's so fun to learn these things live and in person. It's just so energizing and exciting. This is when the new dance program Country Heat was announced along with some other things.



During the day, we mostly hung out in the adults only pool or Jacuzzi with all these peeps. We laughed, drank too much and had a great time. One day we just sat in a huge lounge chair and snoozed for a few hours in the shade. It was so relaxing! Calgon, take me a away. 


 The ship has a carnival area with this neat carousel and carnival type foods. It was so cool being able to grab a drink or food from almost anywhere. Well, thats good and bad. Haha!


On our drive back to Savannah, Georgia we were so tired from getting minimal sleep, so we decided to stop in Viero Beach, Florida for the night. Overall it was a great trip. Very thankful for the memories and that I get to do this with my hubby. He is my biggest supporter and my rock. I couldn't do this business without his support.
