Quick Chicken Paprikash


Chicken Paprikash (Paprika Mushroom Sauce) Served Over Spaetzle Noodles
I forgot to take a photo, so I will post one the next time I make this. The hubby loved it and the kids thought it was delicious. My husband loves anything that resembles German Food, so this is a definite keeper.
1 package Boneless Skinless Chicken Breasts (Butterfly or slice in half to make thinner filets)
1 Tbsp Butter (to brown the chicken breast)
½ tsp Paprika
½ tsp Poultry Seasoning
¼ tsp Salt
Tiny Pinch Cayenne Pepper
½ tsp Garlic Powder
1 Can Beef Broth (or bullion with 1 cup water)
1 Can Cream of Mushroom Soup
1 Tbsp Butter
1/3 -1/2 Cup Sour Cream
1 tsp Paprika
Tiny Pinch Cayenne Pepper


Heat a deep skillet with 1 tbsp butter. Sprinkle chicken breasts with paprika, poultry seasoning, salt, cayenne pepper, and garlic powder. When pan is hot, place breasts into skillet. Allow to brown for about 3 minutes per side (Let them brown, don't keep moving them around). Remove chicken from pan and set aside. Add beef broth, cream of mushroom soup and butter to the skillet and stir well to incorporate and mix up the crud on the bottom. Add sour cream, paprika and cayenne pepper. Return chicken to skillet and simmer on low for 10 minutes. Serve over spaetzle dumplings or egg noodles.

Menu Plan Monday November 1. 2010: And Where BAAACK!

Well, most of the boxes are unpacked and I still have hair left, so things are going well around here. We are getting settled into our new home in Georgia and have been enjoying the small town feel this place seems to have. The husband and I have accomplished a lot over the last week (more so him than I, but hey, I helped). He installed a garbage disposal and a microwave range, which makes my life so much easier in the kitchen. I helped give the hedges and bushes a hair cut - boy did they need it. I had no idea it was so much work to trim hedges. My arms were shaking when I was done. I have painted a hallway (I know, is that all?), and I am about to start on the trim. It is currently a cream color and I cannot stand it. I have never seen trim that was not white before. I have not even made an effort to remove the 5 rooms of wallpaper yet. I am so dreading that. I cannot believe this stuff was ever popular in the 90's. Clearly they loved large flowers.

So, please forgive my absence lately. I have been extremely busy with the kids missing the bus, and trying to hunt down groceries without paying full price *gasp*. My stockpile is already forming in my freezer and pantry, so I am finally feeling better about that. Our menu has consisted of a lot of sandwiches over the last 3 weeks. My husband was gone for 2 of them, and the kids seemed to like the sandwiches; it was easy, so we ate them often. To be honest, they were pretty delicious. The kids favorite was sourdough bread, salami (from the dollar store), swiss, lettuce and tomato. DELISH! This week my goal is to get back on a menu plan, so we can all start eating real food again.
