1 cup unsweet chocolate almond milk
1 scoop Café Latte Shakeology
1 tsp. pure caramel extract
1 cup ice
Place almond milk, Shakeology, extract, and ice in blender; cover. Blend until smooth.

Go Confidently In The Direction of Your Dreams: Ramblings of a 2 Star Diamond Beachbody Coach. 

This cheap little sticker has moved four times and every time I put it by my desk to remind me to dream big and believe that anything is possible.
Several years ago a wise mentor told me, "why not me?," why would this business work for some but not work for me? That was such a simple question, and it really struck a chord for me because it was hard to swallow the truth--the truth that I was the only person standing in the way of my goals and my dreams. That no one else could do it for me. That there was no secret sauce; no microwave success...Sure, as a team we could work together and achieve goals together, but my journey was my own and no one could force me; no one convince me (I'm stubborn!) and ultimately I was in charge of my own destiny.
For so long, I settled for just existing. Just excepting the way life was. Living in a poverty mindset and barely making ends meet for a very long time as a one income family. Many might say why didn't you work, but with a special needs child it was never that simple. I followed my dreams and achieved my degree a few years back but my family needed me at home so I gave up on my dreams and my vision and settled for an " it is what it is" attitude. I worked full time for a year to get us out of debt when we lived in Colorado, and I absolutely loved how it made me feel to contribute to my family; but, with two small children, one being special-needs, it was very draining and took it's toll on me emotionally.
Many of you know I struggle with anxiety and depression and doing two full-time jobs basically was just too much for me. Once we moved to another state thanks to the military, I decided to stay home and that started my love affair with couponing. LOL yup, I was the crazy coupon lady.
Fast forward to today, where I have worked hard and been consistent for four years and have build something amazing that I can be proud of. That my family can be proud of. I still have so many lives left to change; so, I am not done yet. I really love what I do, but it is work and there are days where I don't want to show up, but I remind myself of those people who reach out to me and tell me that I changed their life and that drives me to move forward.
The sticker on the wall reminds me daily to keep moving forward --even if those steps are tiny baby steps --every day; to take steps toward my dreams and my God-given destiny. Because, I refuse to go back to the person I used to be. The person who gave up on her life and herself and her future. I'm fighting a only for me but for my family, future generations, and my fellow coworkers whom are also going confidently in the direction of their dreams.

Coconut Mango Chia Pudding Recipe


Coconut Mango Chia Pudding

This makes 1 jar, or cup of pudding. You can easily make multiple jars, or cups.

In a small jar place:

1/8th of a cup of chia seeds

1/2 cup coconut or coconut almond milk (The refrigerated unsweetened kind like Silk)

1 tsp honey and a small scoop of pure stevia (the kind from the health food store - has a teeny tiny scoop -- i like the NOW brand or the one they have at Vitamin Shoppe. Ingredients should only say stevia.

Dice 1/3 mango and add in to mixture or add in when ready to eat.

Stir well and refrigerate for at least 4 hours or overnight.

Inside Out Healthy Egg Roll Stir Fry


Not sure what to call this recipe, but it reminds me of an inside out egg roll with extra cabbage and veggies. It's very versatile and I would recommend adding more siracha sauce to your food or you can add while cooking if you like it more spicy. The original recipe can be found here at Siggy Spice

Inside Out Healthy Egg Roll Stir Fry

  • 1- 1.5 (i like more meat) pound cooked ground turkey - saute up with one largely diced onion in 1 tbsp coconut oil, or oil of choice. Season meat with a tiny pinch of sea salt and fresh pepper. 
  • 3 TBSP Toasted Sesame Oil
  • 3 Garlic Cloves, minced
  • 1 small head cabbage, sliced thin and chopped 
  • 4 TBSP Low Sodium Soy Sauce 
  • 1 tsp Sriracha Sauce (Next time I will add more)
  • 2 tsp Fresh Ginger, fresh grated. 
  • 1/2 tsp sugar 
  • 1 Tbsp White Vinegar
  • 1 bag (14-16 ounces) Frozen Stir-Fry Veggies with snow peas (I would add another bag of snow peas and broccoli too for extra veggies)
  • 2 cups cooked Brown Rice. Keep the rice on the side.
Brown Ground Beef with Salt and Pepper to taste.
Remove from pan and set aside.
Heat up Sesame Oil in pan and saute cabbage, garlic, and Stir Fry Veggies until desired tenderness.
Stir in the Soy Sauce, Sriracha, Ginger, sugar, and White Vinegar
Add the Ground Beef into the veggies and mix well. Taste it and make sure it is seasoned well for your tastes, adding more Soy Sauce, Sriracha, Ginger to taste. Or you can allow each person to spice their dish up at the table. 
Serve with brown rice on the side and a small salad.

Next time I make this I will add in some more snow peas and broccolli to make it go further and add more veggies. 


Time Saving Tip! You could use precooked/frozen meat/onion mix - just heat in microwave and add into the cabbage mixture. I like to cook up a few pounds of ground meat and keep it in 1 lb portions for a quick meal.

Clean Eating Tuna Patty Recipe
I learned this from a youtube video, tweaked it a little, and fell in love. It's super simple and tastes great.

Yields 4 servings

1 large can of tuna in water, drained
1 egg 
1/4 cup of almonds ground (use a coffee, spice grinder, vitamix or ninja blender).
Add seasonings (sea salt, lots of pepper, Mrs dash) and make patties. 

Brown in about 2 tbsp of coconut oil.

Enjoy with salad and a sweet potato, brown rice, or quinoa.
