Lamb Burgers with Tzatziki Yogurt Sauce 

What's for dinner? Lamb burgers! This lamb recipe was super easy and quick. I think I had the recipe in my binder for YEARS but never made them because I wasn't sure if I would like them. Plus, let's be honest, I thought it was hard to cook lamb because it sounds all fancy and stuff. Haha. My photo doesn't do it justice.  They are SOOOO GOOD! I used my George Foreman grill to make it easy, but you can grill them outside as well. 

Patties:

1 package ground lamb
1/4 small onion, grated
1/2 small zucchini, grated
1 clove garlic, grated
1/2 tsp salt
fresh pepper
1 tsp oregano


Combine all ingredients and shape into 4 even patties. Cook on grill until inside temp reaches at least 160-180* (I accidentally cooked mine to 180)

Sauce:

1 small container Greek yogurt
1/2 cucumber diced, seeds removed
pinch of stevia or sugar, optional if you like your sauce sweet
pinch salt
fresh pepper
dash of oregano
Add ingredients to small bowl; Stir to combine.

Cut pita bread in half and warm in oven or toaster oven. Cut patti
e in half and place one half in each pita. DELISH!

Pumpkin Protein Power Granola


This is not your typical crunchy granola, but a little softer. I bet if you cook it longer it would crisp up a little more, but it was not crunchy like some of my other granola recipes. It is still delicious!

3 cups regular oats
1/3 cup ground flax seed
1/4 cup chopped walnuts
1/4 cup slivered almonds
2 tsp ground cinnamon
1/3 cup pumpkin
2 tbsp coconut oil, melted
1/3 cup honey
1/4 cup coconut sugar
1 tsp vanilla extract
1/3 cup orange juice
1 scoop vanilla protein powder (any kind is fine)


Preheat oven to 300* Mix all ingredients together in a large bowl. Spray a large baking sheet with baking spray. Spread mixture onto sheet and bake for 20 minutes; stir and bake for 10 minutes more. Allow to cool and place into glass jars or containers.

*I keep mine in the refrigerator and use on greek yogurt parfaits.

Clean Salad Dressing Recipe(Vinaigrette)


Make Your Own Easy Vinaigrette Salad Dressing

Opt for this easy & healthy version of salad dressing when you want to lose weight or incorporate more healthy foods into your diet. When choosing greens, pick more darker green lettuces, spinach and spring mix options. Top salad with 1-2 Tablespoons of dressing. Watch your portion sizes when it comes to dressings. That is where a lot of calories can come from. Skip the ranch dressing and make this instead. 




Vinaigrette Dressing


6 Tbsp Olive Oil
1 clove garlic, grated or pressed
2 Tbsp Dijon mustard
1 Tbsp Honey
3 Tbsp Red Wine Vinegar
1 Tbsp pesto (make your own or buy it made - optional)
fresh pepper, pinch salt

Optional add ins:
Tbsp Tastefully Simple Tomato Garlic Basil Seasoning
Italian Seasoning

Directions:

Place ingredients into small jar and shake to emulsify. It makes a creamy vinaigrette that is sure to please everyone. Try different mustards for a different taste.

Clean Pumpkin Oatmeal Protein Cookie Recipe

Pumpkin Protein Cookie
Easy protein cookie you can whip up.

Yields 12 cookies

Preheat oven to 350*

1 banana, mashed
1/2 cup pumpkin puree
1 cup oatmeal
1 scoop vanilla protein powder
2 tbsp. water
3 tbsp. egg whites
1/8 cup stevia or if using the strong stuff from the vitamin store use about 4-5 tiny scoops
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/3 cup walnuts
1 tbsp. flax seed meal (optional)

Combine ingredients until well blended. Drop onto cookie sheet lined with parchment or silpat sheet  and lightly flatten them. Cook for about 15 minutes or until golden. Great as a snack or breakfast.

Clean Apple Muffins


These were really tasty! I modified the original recipe, which can be found at DelightedMomma.com. The whole family enjoyed them. I would recommend having 2 as a serving for a breakfast meal, or 1 as a snack.
They are made with almond flour, ground oatmeal, maple syrup, egg whites and applesauce. 



Clean Apple Muffins

3 egg whites (9 tbsp)
1 cup unsweetened applesauce
1/4 cup maple syrup
2 tsp vanilla extract

1 Cup Almond Flour
1 Cup Oatmeal Flour (ground up Oatmeal)
1/2 tsp baking soda
1/2 tsp baking powder
1 tbsp cinnamon

Directions: Preheat oven to 350*.
In a small bowl combine, egg whites, vanilla, maple syrup, and applesauce.
In a larger bowl combine: almond flour, oat flour, baking soda and powder, and cinnamon.
Add wet ingredients to dry and stir until combined. Scoop into 12 lined muffin tins sprayed with baking spray. Bake 15-20 minutes or until golden and done (test with a toothpick).

* Next time I will add walnuts or pecans.

Be Thankful You Can Workout

I was thinking about how lucky I truly am to be able to be physically active. Some people are injured or disabled and don't have the option to workout. Sure we can all do some form of exercise, but to be able to really push myself and be capable of achieving some pretty cool things is a blessing. I think too often we take our health for granted and don't appreciate what we have right in front of us. I also know that in 20 years, I wont be able to do the things I am doing now. I don't forsee Insanity or P90x happening in my 50's. Haha. So, instead of dreading my workout, or grumbling about not wanting to workout, I choose to be thankful for the opportunity to be fit and active. To enjoy working hard towards something. To feel good in my skin. What do you choose?
