Cinnamon Sugar Pita Chips

Ingredients:

2 pita bread rounds, cut into triangles and pulled into two parts from the edges.
Cinnamon-sugar mixture in a shaker
3 tsp melted butter or margerine

Preheat oven 350*
Place pita triangles onto a cookie sheet in one layer
Brush on the butter using a pastry brush
Sprinkle with cinnamon-sugar

Bake 8-10 minutes or until golden. Cool and eat warm.

The verdict:

My kids loved these. Said they were the best thing ever. I thought they were good, but not the best thing ever. Anyways, its an easy snack and the kids can help you make them too.

Mint Chocolate Pudding Pops


Here is a tasty, easy and fun treat you can whip up in a jiffy and let the kids help.
This recipe is adapted from Kraft Food and Family Magazine's Cookies & Creme pudding pops recipe.

1 pkg Chocolate Instant Pudding or 4 packs of Jell-o instant pudding singles
2 Cups Cold Milk
6 Keebler Mint Cookies - they are similar the the Girl Scout Thin Mints YUM!
1/2 Cup Cool Whip, extra creamy tastes the best

Directions:
Using a large bowl, beat pudding with milk; whisk for 2 minutes.
Place mint cookies into a ziploc bag and crush them with a meat tenderizer, hammer, or whatever you have close by.
Add cookies and cool whip to pudding. Stir gently until blended. If you fold in the cool whip it will have a swirled effect.
Spoon mixture into 9 small paper or plastic cups. Use a large ice-cream scoop to make this go faster.
Insert popsicle sticks into the cups to make the handles. Freeze 5 hours or until firm.

Tip: To remove the pops from the cup. Place the bottom of the cup in a bowl of warm water for about 15 seconds. Push up on the bottom of the cup and the pop will release.

"Ghetto" Garlic Bread Using Leftover Hot Dog Buns

I am not sure where this recipe came from or how it came to be called "ghetto" garlic bread, but it has just stuck and we still call it that. Hopefully I do not offend anyone with the name. If so, my apologies.





This is a very simple recipe I have used for many years, and did I mention it is out of this world too?!?

4 Hot Dog Buns, break into two pieces
1/2 stick Butter or margerine
2-3 cloves Garlic, chopped(or grated), or 2 tsp prepared minced garlic from a jar
pinch salt

Melt butter in microwaveable dish. Add garlic and salt. Stir well. Dip hot dog buns into the butter mixture making sure to get the garlic smeared on each piece. Flip each piece over and repeat. Place on a cookie sheet and broil until toasted (2-5 minutes). Serve and watch your family fight over them. :)

Side Note:
This does not work well with garlic powder or garlic salt, but it is doable.

Easy Beef Stroganoff (Using Frozen Meatball's) with Homeade Egg Noodles

I made Meatballs with Ikea Cream Sauce one night and had some leftover meatballs and sauce, so I decided to make two meals out of one. I added sour cream and paprika to the original Ikea Graddsas cream sauce recipe and made what tastes like a rich Beef Stroganoff without mushrooms (I detest mushrooms!) It turned out really well, and was quick and easy. So, here is the Cream Sauce Recipe with the additions and directions.

Easy Beef Stroganoff or German Style Gravy
Ingredients:

1 - 2 lb Precooked Meatballs*
2 Tbsp flour
2 Tbsp butter
1/2 cup Heavy Whipping Cream
1 cup Beef Broth or stock (can substitute beef bouillon dissolved in water)
1 tsp soy sauce
Pinch Salt and pepper, to taste
Pinch Paprika
1/2 Cup Sour Cream

Directions:
Heat Butter in small sauce pan. Add flour and cook stirring constantly for about 2 minutes. Add 1 cup beef broth or stock, 1 tsp soy sauce, and 1/2 cup heavy whipping cream, salt and pepper, paprika, and sour cream. Heat until slightly thickened. Mix with cooked frozen meatballs, or cook the meatballs in the gravy. Serve over egg noodles or mashed potatoes.

* Make meatballs in advance by mixing ground beef, egg, breadcrumbs, seasonings, onions, Worcestershire sauce. Roll into 1" balls and place on cookie sheet. Bake for approx 30 min @ 350*. When cooled place in freezer bags, label and freeze. To serve, thaw in refrigerator, microwave to heat up, or throw in your favorite sauce and simmer.

(Egg Noodles) Fresh Pasta in a Mixer or Food Processor
2 Cups Flour
3 eggs
1 tsp
1 Tbsp olive oil
1/2 - 1 Tbsp water

Mix Flour and eggs together. Add salt and mix again. Add oil and water. If dough is too sticky add a little flour. Scrape out of the bowl and knead on a lightly floured surface. Add flour if necessary. Knead for a few minutes (2-3). Let rest 20 minutes before putting through the pasta maker. Cut dough into 4 sections and put each section through your pasta maker. If you do not have a pasta maker, roll the dough out and cut into small pieces with a pizza cutter. You can also wrap the dough in plastic wrap and store in refrigerator for later use.

Mini Ham & Cheese Pita Sammies - A Pitawich :)



I made these for my kiddos for lunch today. I was given these tiny pita breads and thought mini sammies would be a good change from the same old PB & J's the kids have been having in school. They are very easy to make and the kids really enjoyed them. If you have a hard time finding the mini pita breads, Trader Joe's carries these.

Ingredients:

Mini Pita Breads
White Cheddar Sliced Cheese or block cheese cut into slices
Sliced Ham lunch meat

Directions:

Slice the pitas open carefully about halfway, so it looks like they have a mouth. Slice the ham and cheese into strips. Place the meat and cheese inside the pita. Place pitas in a toaster oven for about 2-3 minutes on toast to melt the cheese and crisp up the bread a little.

You could also fill these with chicken or tuna salad for a quick and tasty lunch.

Easy Taco Salad

I tweeted about this earlier, so I thought hmmmm maybe I should blog about it too. This is a great recipe I use often. Its one of those family favorites that everyone loves and mom loves it too, because it's easy.

1 lb Ground Beef
1 Onion, chopped
1-2 cloves garlic (can use dried if you dont have fresh. Use Rachel Rays tip for garlic: Grate the garlic on a grater)
1 Packet taco seasoning (or you can use Chili Powder, Cumin, Salt and pepper to taste)
1 lb Velveeta, cut into large cubes
1 can Rotel (3/4 can of diced tomatoes works too)
Iceberg Lettuce, chopped
Tomato, chopped
Tortilla Chips


Brown ground beef until almost done. Drain. Add onion, garlic, seasonings and saute until done. Add Velveta cubes and Rotel and cook on medium heat stirring occasionally. To serve: Place lettuce, tomatoes, and chips in bowl and pour meat and cheese mixture over.

I like to mix the meat with the lettuce and tomato, but when you have leftovers this gets soggy. Either way its good eats!
