Make Ahead Meal: Clean Egg White Omelette Muffin Recipe

Want a great make ahead easy breakfast meal? Trying to eat healthy and lose weight? Try out this simple egg white muffin recipe. You can basically make your own omelet with the ingredients you like or have on hand. Try adding spinach, tomatoes, or other omelette type fillings. 

Egg Omelette Muffins
Yields 12 muffins

3 whole eggs
2 cups Egg Whites (from the box - 1 pint)
chopped fresh broccoli crowns, optional
chopped red or green bell pepper
chopped onion
pinch salt and pepper
cooking spray

Spray muffin tin with olive oil or baking spray. Preheat oven to 375*. In a large bowl combine eggs, egg whites and salt and pepper.
Place broccoli, bell pepper, and onion into baking tins (a good amount). Pour eggs evenly into each muffin tin. Bake 20-30 minutes or until set. Store in refrigerator and heat in microwave when ready to eat.

Serve on toasted English muffin. Enjoy!

Snack Time: Nacho's with Black Bean Salsa

Chips with Black Bean Salsa
(Yields approx 3-4 servings of salsa)
Blue or baked chips - 1oz per serving
1 tomato, diced
1 clove garlic, chopped
1/2 cup cilantro, chopped
1 can black beans, drained (or 15 oz precooked blackbeans - i cook and freeze mine)
Lime Juice
1/2 avacado, largely diced
1/4 red or yellow onion, chopped
1 jalapeno, diced
1 oz cheese, grated

Place chips on plate. Sprinkle with cheese. Microwave for about 30 seconds or until cheese melts. Spoon about 1/2 - 3/4 cups salsa on top of chips and ENJOY!

Vitamix Pumpkin Almond Butter Recipe

I am still working on the exact measurements, but I am almost positive this is right. I will be making another batch next week, so I will double check.

1 1/2 cups whole almonds
3/4 cup canned pumpkin
2 tsp maple syrup
5 dates

Place ingredients in Vitamix. Turn slowly to high and use the damper to push ingredients into the blade. Keep doing this until it gets creamy and almost all of the almonds are pureed. It's okay to have some almond chunks. I thought they were good.

Serve on an english muffin. MMMM MMMMM. Tasted like pumpkin pie!

I am assuming you could do the same thing without a Vitamix or commercial blender.
Try using 1/2 cup almond butter and 1/2 cup pumpkin puree and go from there. The almond butter may have sweetners depending on the brand you purchase. Instead of adding the dates, just add the maple syrup. Stir all ingredients togetether.

Received TurboFire - It's AWESOME!

Recently ordered TurboFire when it was marked down to $53, which BTW I have never seen. This was unheard of! I am in love with this workout set. It's huge! And the workouts are so fun. I find myself smiling and whooping and hollering during the workouts. When I finish the workouts, my abs are fired up and thats without doing any floor work. I get drenched in sweat and dont even realize I am working that hard. I really like it. The nutrition guide is fantastic. I have seen several recipes that I will be trying out. Have you done Turbofire? Are you a Turbo girl???? I think I am definitly a Turbo Girl! :) I am going to start a Les Mills Body Pump/ TurboFire Hybrid during the 90 day challenge.

Cranberry Orange Vanilla Power Granola

Cranberry Orange Vanilla Granola

In a large bowl combine:
1/4 cup peanuts
1/4 cup almonds
1/3 cup walnuts
1/4 cup wheat germ
3 cups oats
1/3 cup flax seed, ground
2 tsp cinnamon
pinch salt

Combine in a small sauce pan:
1/3 cup orange juice (used country style)
1/3 cup honey
1/4 cup blonde coconut palm sugar (or brown sugar)
2 tsp coconut oil (or cooking oil)
1 tsp vanilla

 zest from 1/2 orange (use more for stronger orange flavor)
1/3 cup dried cranberries

Combine dry ingredients in a large bowl; stir. Heat orange juice, honey, sugar and oil until sugar dissolves. Stir in vanilla. Pour wet ingredients onto dry ingredients and zest orange into granola. Stir. Spray a large cookie sheet with olive oil or cooking spray. Pour granola onto pan and spread out. Bake at 300* for 10 minutes; stir. Bake another 10-15 minutes. Scrape granola into a large clean bowl. Add cranberries.
