Make Ahead Meal: Clean Egg White Omelette Muffin Recipe

Want a great make ahead easy breakfast meal? Trying to eat healthy and lose weight? Try out this simple egg white muffin recipe. You can basically make your own omelet with the ingredients you like or have on hand. Try adding spinach, tomatoes, or other omelette type fillings. 

Egg Omelette Muffins
Yields 12 muffins

3 whole eggs
2 cups Egg Whites (from the box - 1 pint)
chopped fresh broccoli crowns, optional
chopped red or green bell pepper
chopped onion
pinch salt and pepper
cooking spray

Spray muffin tin with olive oil or baking spray. Preheat oven to 375*. In a large bowl combine eggs, egg whites and salt and pepper.
Place broccoli, bell pepper, and onion into baking tins (a good amount). Pour eggs evenly into each muffin tin. Bake 20-30 minutes or until set. Store in refrigerator and heat in microwave when ready to eat.

Serve on toasted English muffin. Enjoy!
