Cranberry Orange Vanilla Power Granola

Cranberry Orange Vanilla Granola

In a large bowl combine:
1/4 cup peanuts
1/4 cup almonds
1/3 cup walnuts
1/4 cup wheat germ
3 cups oats
1/3 cup flax seed, ground
2 tsp cinnamon
pinch salt

Combine in a small sauce pan:
1/3 cup orange juice (used country style)
1/3 cup honey
1/4 cup blonde coconut palm sugar (or brown sugar)
2 tsp coconut oil (or cooking oil)
1 tsp vanilla

 zest from 1/2 orange (use more for stronger orange flavor)
1/3 cup dried cranberries

Combine dry ingredients in a large bowl; stir. Heat orange juice, honey, sugar and oil until sugar dissolves. Stir in vanilla. Pour wet ingredients onto dry ingredients and zest orange into granola. Stir. Spray a large cookie sheet with olive oil or cooking spray. Pour granola onto pan and spread out. Bake at 300* for 10 minutes; stir. Bake another 10-15 minutes. Scrape granola into a large clean bowl. Add cranberries.
