Healthy Super Bowl Spinach Dip Recipe



Spinach Dip
Ingredients:
10 oz. - 12 oz bag of frozen spinach, cooked and squeezed to get the water out
1½ cups nonfat plain Greek yogurt, drained
1 clove garlic, finely chopped or grated
¼ cup finely chopped green onions
4 artichoke hearts in water chopped (I added this to beef it up - it's not listed in the photo above)
1 Tbsp. fresh lemon juice
Sea salt and ground black pepper (to taste)
fresh red pepper flakes (optional)
Dash stevia (optional)
Preparation:
1. Place spinach in colander; drain of all excess water.
2. Finely chop spinach; place in a medium bowl.
3. Add yogurt, garlic, green onions, and lemon juice; mix well.
4. Season with salt and pepper if desired.
5. Refrigerate until ready to serve.

P90x German Potato Soup

If this hearty soup made with turkey bacon, cabbage, and leeks isn't a P90X soup, we don't know what is!

German Potato Soup

Total Time: 30 min.
Prep Time: 8 min.
Cooking Time: 22 min.
Yield: 4 servings, 1½ cups each

Ingredients:
1 Tbsp. olive oil
3 slices turkey bacon, chopped
½ medium onion, chopped
1 leek, chopped
2 medium carrots, chopped
2 cups shredded cabbage (about ½ head)
4 cups low-sodium organic vegetable broth
3 medium potatoes, cut into ½-inch cubes
1 bay leaf
1 tsp. caraway seeds
½ tsp. ground black pepper
¼ tsp. sea salt
¼ tsp. ground nutmeg
4 Tbsp. nonfat plain yogurt

Preparation:
1. Heat oil in large sauce pot over medium-high heat.
2. Add turkey bacon, onion, leek, carrots, and cabbage; cook, stirring frequently, for 6 to 7 minutes, or until vegetables soften.
3. Add broth, potatoes, bay leaf, caraway seeds, pepper, salt, and nutmeg; bring to a boil, stirring frequently. Reduce heat to medium-low, maintain a gentle boil, stirring occasionally, for 15 minutes, or until potatoes are soft.
4. Place 2 cups of soup in a blender or food processor; cover with lid and kitchen towel. Blend until almost smooth.
5. Return blended soup to sauce pot; mix well.
6. Serve each portion topped with 1 Tbsp. yogurt.

Vegan Black Bean Fudgy Brownies with Quinoa and Oatmeal






Black Bean Fudgy Brownies
Yields 15 brownies

These turned out very moist and fudgy and more like a dessert than a brownie, but I love fudge brownies, so it’s a keeper. I will try next time to use stevia to lower the calorie content. Yields about 15 servings at an estimated 130 calories, 20 carbs, 5 grams of protein. Recipe can be made dairy free by using "Enjoy Life" chocolate chips. 

2 cans black beans, undrained
¾ cup uncooked oatmeal
¾ cup cooked quiona
4 tbsp agave nectar w a pinch of pure stevia (It was not quite sweet enough, so I suggest adding more stevia)
1 tsp vanilla
4 tbsp good cocoa powder
3 tbsp PB2 (powdered peanut butter - can be found in the organic section of the supermarket)
1/3 cup walnuts
1/3 – ½ Chocolate chips for the top (white chocolate bark was used in the photo because that's all we had)

Put everything except chocolate chips and walnuts into commercial blender like the Vitamix or Blendtec (ninja might work) or food processor and puree until smooth and creamy. Spray a 9*13 casserolle dish with baking spray. Spread pureed mixture into pan. Cook for 20-25 minutes.

Turkey Taco Soup: leave out the turkey meat for a meatless meal

Easy Taco Soup Recipe 


I make this often and it's one of our favorites. It's extremely easy. Even my daughter who is 16 whipped it up for us the other night. It's really good! I love to have meatless meals at least once a week. Some people call it meatless Monday, but it doesnt always fall on Monday, so I don't know what to call it. Meatless Taco Soup Recipe

1 large onion, chopped
1 can re-fried beans, low fat or make your own
1/2 tsp salt
1/4 tsp pepper or a few twists
2 tsp cumin
1 tsp garlic powder
1 tsp Mexican oregano
2.5 cans vegetable stock, beef stock or chicken stock
1 can cannelloni beans
1 can black beans
1 can Rotel, mild
1 can diced tomatoes or stewed tomatoes cut up
1 can ranch style beans (aka chili beans) - or add chili powder
2 tbsp taco sauce (can use hot sauce- but it might be too spicy with the Rotel)
1 9 oz package frozen corn

For serving:
Brown rice, prepared
Baked Tortilla Chips
Greek Yogurt
Mexican Cheese

In a large pot, head 1 tbsp olive oil and saute onions until golden. Add refried beans and seasonings, tomatoes, taco sauce, rotel, broth or stock, and corn. Simmer on low for 20-30 minutes. DO NOT BURN IT.

Serve over a little brown rice and top with, Greek yogurt or sour cream and cheese. 

Freezes well and tastes even better the next day. For additional flavor, add some fresh cilantro.

Slow Cooker Option: For a quicker meal, brown 1 lb turkey meat with onions and freeze (I make this in double or triple batches for easy meals) To make this recipe, just thaw and place everything in the slow cooker.

Turkey Taco Soup Version:

Brown turkey with onion until cooked, add in remaining ingredients and simmer on low 20-30 minutes.  You may need to add another can of stock.

P90X3 Nutrition Guide Recipe: Sweet Chipotle Salad Dressing



Try out this simple, fresh and clean vinaigrette recipe I adapted from the P90X3 Nutrition Guide. It is a new favorite. I used Ancho Chili Powder(found it at Kroger) since I had that on hand and it worked magically. We just started P90X3 and are loving it so far. If you are looking for help with your nutrition, I hold a 10 day Nutrition Jump Start group once a month where we focus on Nutrition and getting you active again. The next group is in May. Sweet Chipotle Salad Dressing 

2 Tbsp Raw Honey or maple syrup
6 Tbsp Balsamic Vinegar
5 Tbsp Olive Oil
1 clove garlic, chopped finely or 1 tsp prepared garlic
2 Tbsp dijon mustard
1 Tbsp Chipotle Chili Powder (I used Ancho Chili Powder - this is not the same as regular chili powder)
2 tsp paprika
1/2 tsp sea salt
1/4 tsp ground pepper or a few twists of fresh black pepper

Add ingredients into a small jar and shake to combine, or place in blender(I prefer the jar method). Enjoy!

*Store in the refrigerator. One serving is about 1-2 tbsp.
