Chicken and White Bean Soup


This dish is really simple. The hardest part is making the chicken. You could also buy a rotisserie chicken and use part of that to make the prep much faster.

Yields: 6 servings at approx 200 calories each serving


  • 1 tbsp olive oil
  • 1 large onion chopped
  • 2-3 stalks celery, chopped
  • 1 clove garlic, chopped (or 1 tsp prepared garlic)
  • 1/4 tsp dried rosemary
  • 1/4 tsp ground sage
  • 1 32 oz carton low sodium chicken broth
  • 1/4 tsp salt (u can add more later)
  • 1/4 tsp black pepper
  • 1.5 cups water
  • approx 2 lbs (one package) of grilled or pan seared chicken breast, cut into cubes
  • 1 can or 1.5 cups cooked white navy or cannellini beans, undrained
  • Optional: pinch of crushed red pepper flakes. 


Directions:

Saute onions in olive oil until opaque. Add seasonings and garlic for about 1 minute. Add broth, water, chicken and beans. Simmer for 15-20 minutes. Enjoy.

Makes a great healthy snack, lunch or dinner. This soup freezes well.

MINESTRONE SOUP RECIPE


Try this easy soup. It's so simple and you can throw it together really quickly. Great for keeping your waistline thin and eating clean. It would make a great potluck meal to take to an event so you have a healthy option to choose from. 

2 Tbsp olive oil
1 chopped onion
2 carrots sliced thin
2 celery stalks sliced 
1 tbsp minced garlic (i used the stuff in a jar)
1 Can Cannellini Beans
5 Cups chicken Stock 
1/2 cup good red wine (something you would drink, not cooking wine- Bohemian Cabernet is good)
1 Can petite diced tomatoes
3 cups fresh spinach
1/2 - 1 cup of frozen green beans or peas
1 cup of whole wheat noodles (macaroni, penne, you pick)

In a large stock pot, saute onions in olive oil for about 2 minutes. Add in celery and carrots and saute about 3 minutes longer. Add in remaining ingredients except for the pasta and bring to a simmer. Add in pasta and cook until pasta is done. Enjoy!

Yields:12 servings, 1 cupcake each
Ingredients:
1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
½ cup pure maple syrup
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
1 tsp. pure vanilla extract
1/3 cup dark chocolate chips
Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
4. Divide batter among 12 prepared muffin cups.
5. Top each muffin with about four chocolate chips; push into batter.
6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
7. Cool completely and enjoy!

How to Make Tuna Salad Lettuce Wraps


Tuna Salad Lettuce Wraps 

Yields 2 Servings
Try this simple, fast recipe if you are trying to eat clean, lose weight or want to live a healthier lifestyle.  
  • 1 Can albacore tuna, drained
  • 2 tbsp greek yogurt
  • 1 tbsp cranberries
  • 1/2 macintosh apple, or green apple, diced 
  • pinch sea salt
  • Fresh black pepper
  • 1/2 tomato, chopped
  • dash of garlic powder
  • small squirt of mustard
  • pinch of stevia (optional - i like it sweeter)
  • tbsp of chopped pecans or walnuts
  • 6 small/medium sized romaine lettuce leaves, rinsed and patted dry. 
Combine all ingredients except romaine lettuce leaves. Scoop half the mixture into 3 lettuce leaves and enjoy! One serving is 3 lettuce leaves.

1 cup almond, rice milk, skim milk or water
1 scoop Vanilla Shakeology
½ cup unsweetened applesauce
½ tsp. ground cinnamon
1 cup ice
Combine milk, Shakeology, applesauce, cinnamon, and ice in blender; cover. Blend until smooth.

Easy Baked Asparagus Recipe


Try this easy asparagus recipe.

1 lb asparagus, trimmed.
1 tbsp olive oil
1 pinch sea salt
a few twists of fresh black pepper.

Toss to coat in a loaf or baking dish. Cook at 450* for 20 minutes. For extra tastiness add a little grated parmesan to it during the last 10 minutes. Yum!

Healthy Apple Muffin Recipe Using Egg Whites and Whole Wheat Flour

Fall is here and it's time for all things apple and pumpkin flavored. Try these moist muffins with less than 100 calories each. Use a silicone muffin tin pan for easy clean up and quick muffin release. 


Cooking Time: 18 min. 
Yield: 12 servings, 1 muffin each
Ingredients:
Nonstick cooking spray (optional)
1½ cups whole wheat flour
½ cup wheat bran (or oat bran)
1 Tbsp. baking powder
½ tsp. baking soda
¾ cup apple butter, no sugar added
½ cup low-fat buttermilk (or nonfat plain yogurt)
2 large egg whites
1 medium apple, chopped (about 1 cup)
½ cup chopped pitted prunes
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by lining with muffin papers or coating with spray.
3. Combine flour, bran, baking powder, and baking soda in a medium bowl; mix well. Set aside.
4. Combine apple butter, buttermilk, and egg whites in a large bowl; mix well.
5. Add flour mixture to apple butter mixture; mix until just blended.
6. Add apples and prunes; mix until just blended.
7. Divide batter among twelve prepared muffin cups.
8. Bake for 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.
9. Transfer muffins to rack; cool.

How to Make Your Own Trail Mix Snack Bags for Kids


Make your own trail mix snack bags for the kids


To make about 6 snack bags you'll need the following

1/2 cup peanuts
1/2 cup cashews
1/2 cup raisins
1/2 cup unsweetened O's type cereal (I prefer Mom Brand)
1 heaping cup of pretzels, sticks or even twists

Combine ingredients in a large bowl. Scoop out heaping 1/2 cup servings and place into snack bag; seal and save for quick easy on the go snacks the kids will love.

Optional add-ins:
Dried fruit
M & M pieces
Dried coconut
Walnuts
Pecans
Cranberries


Healthy Oriental Pineapple Coleslaw Salad with Grilled Chicken Recipe


Oriental Pineapple Coleslaw Salad with Grilled Chicken 

Enjoy this apple cider vinegar based coleslaw with grilled chicken, broiled fish (think fish taco's too!) or even steak. It is a great BBQ side to bring a to a party or PotLuck at work/church. 

1/2 head of green cabbage, shredded
1/2 head of purple cabbage, shredded
1/4 red onion, shredded
4 carrots, shredded or grated
4 green onions, chopped
1/2 fresh pineapple, diced
1/4 cup apple cider vinegar
2 Tbsp sesame oil
1/8 cup slivered almonds, toasted
1/8 cup slivered sesame seeds, toasted
1/2 tsp sea salt
1/4 tsp black pepper
pinch hot pepper flakes, optional

Using a mandolin with the thinnest setting, shred cabbage and onion, or use a food processor with the slicer attachment and quickly push veggies through the shoot to shred them. (Food processor is the fastest way to make it) Use the grater side of the food processor blade to shred the carrots. Chop the onion and pineapple. Combine all ingredients except the almonds and sesame seeds in a large bowl. Taste and add a little more salt if necessary.

Toast sesame seeds and almonds in a non stick pan for a few minutes. Be careful not to burn. Sprinkle the top of the cabbage slaw with almond/sesame seed mixture when serving.

To make this Whole 30/Paleo approved, substitute Bragg's apple cider vinegar for the regular apple cider vinegar.
