Slow Cooker Italian Chicken
The whole family enjoyed this dish. I served the chicken with half brown rice and half white rice (cooked in separate pots) and then combined the rice in the individual serving bowls. The dish was very simple and easy to prepare in the morning. Go ahead and prepare the rice, but wait to cook it until right before you serve it. I measure the water and rice and then leave it on the stove, so the only thing I have to do is turn on the burner.
  • 1 package boneless skinless chicken breasts (about 3-4 breasts)
  • 1/3 cup Italian Dressing
  • Pepper
  • 2 Pinches crushed red pepper flakes
  • ½ tsp Garlic powder
  • Paprika
  • Thyme
  • Rosemary
  • Sage
Rinse chicken breasts and place into slow cooker or Crock-Pot. Pour in Italian dressing. Sprinkle the tops of the chicken with the remaining spices. No need to measure, just take a pinch or two and sprinkle evenly. Place one pinch of crushed red pepper flakes in the liquid and one pinch on top of the chicken. No need to stir. Cover with lid and let cook on low for 6 hours. Serve with brown or white rice. Drizzle chicken and rice with the sauce.
*Make a rice bowl by layering rice, chicken and steamed vegetables (stir fry veggies work well).

Thursday – Tuna Helper (my kids are so going to hate me – they do NOT like anything hamburger helper related).
Friday – Spaghetti (Nikelle has Dance @ 5:45)
Saturday – Dining Out (Date Night)
Sunday – T-bone Steak and Baked Potato

Menu Plan Monday 01/10/2011

I know, I know, it's been a while again. Things have been consistently caotic around here and I am sure they will not be getting any better any time soon. I cannot wait until Spring comes so I can hopefully get "Spring Fever" and start organizing more. Our home is so unorganized right now and to be honest, its driving me nuts. Yet, I cannot figure out where to begin. Organizing is definitly not my forte. I am pretty sure the dissaray is due to unpacking so quickly and shoving things here and there just to get it out of sight. Now comes the fun part, purging, sorting and organizing - YUK! I do not like organizing. It makes my brain hurt. :) But, lets get to the menu for the week. Our schedule has started to pick up more, so I am finding we dine out more (fine with me). We live about 30 - 40 minutes away from most places, so its almost impossible to eat at home on nights we have to be somewhere at 5 or 6.  So, on those days, we plan on eating out and the rest, we will eat at home.
