Peach Jalapeno Salsa Recipe
4 medium ripe peaches, peeled, chopped
½ medium red onion, chopped
2 medium jalapeƱo peppers, seeds and veins removed, chopped
½ tsp. crushed red pepper flakes
¼ cup fresh lime juice
1 tsp. hot pepper sauce (like Tabasco)
¼ cup finely chopped fresh cilantro

Combine peaches, onion, jalapeƱos, red pepper flakes, lime juice, hot pepper sauce, and cilantro; mix well.

First you need to order your ROKU device. The ROKU 3 is the best streaming device for the price on the market.

Follow the simple instructions to connect your Roku to your television. Basically you plug in the square box into the wall and an HDMI cable to your television. Connect it using the guided setup to your wireless internet and enter your password. You'll need to set up a account and enter a pin # once you log in to your TV roku and sync the remote.

Now, you just search for the Beachbody Channel and add it.

Kitchen Tip Tuesday!

When you're browning turkey or lean ground beef go ahead and cook 2 to 3 packages at a time and save the cooked meat in freezer bags for future meals.

I want you to start thinking about the concept of cooking once and eating twice. It makes life so much easier when your are in a pinch and you need a quick meal. You can just take out this ground meat, quickly thaw and make tacos, pasta sauce, lettuce wraps, salads or pita pizzas… Just to name a few examples.

This also works great for cooking grilled chicken breast. Slice up into 3-4 ounce servings and individually freeze in bags or containers.

Healthy Egg Salad Recipe: Made With Cottage Cheese 

Sprouted grain bread, pita bread or wrap
6 hard boiled eggs, peeled 
1/2 - 3/4 cup of low-fat cottage cheese
1/2 - 1 Tbsp.  mustard
pinch salt, fresh pepper
Tbsp sweet pickle relish
1/8 tsp - 1/4 tsp of curry (optional, but gives it great flavor)


Smash eggs with fork in a medium sized bowl and mix with cottage cheese, mustard, salt, pepper, and herbs. Place onto 1 slice of bread cut in half, or half a toasted pita. 

Serve with a side salad of mixed greens, a few sliced strawberries, sliced tomato, sunflower seeds, cranberries and balsamic or white vinegar (I like to use chipotle seasoning for some added spice/heat and flavor).

Great for meal prepping lunches - just make your sandwich in the morning or keep egg salad in a different container from the bread. My two teenagers love this stuff!
