1 c (8oz) silken firm tofu

2 Tbsp  lemon juice

2 Tbsp olive oil3 minced garlic cloves

1/2 tsp salt

1/8 tsp black pepper 

Blend until smooth.... Plus added protein from tofu and low calories... My kids aka the monkeys don't know I don't use mayo

Easy Slow Cooker Healthy Shredded Mexican Chicken


{Easy Crock-Pot Recipe}

I am all about easy meals. This is something you can whip up in a few minutes and be done. Ain't nobody got time for elaborate meals, right!? I know I sure don't. Try Greek yogurt in place of sour cream. It's good. Trust me ;)




Makes moist shredded chicken for taco's, taco salad, lettuce wraps and more

1 large package of boneless chicken breasts
1 large can of diced tomatoes, undrained
1 small can of green chilis, undrained
sprinkle chicken with cumin, chili powder, garlic powder, salt and pepper
1 cup frozen corn (add during last hour or 2 of cooking)
Whole wheat tortillas
1 can or cup of black beans, as a topping.

Place everything in slow cooker. Sprinkle chicken well with seasoning. You can always add more later. Cook on low for 6-8 hours or high 3-4 hours or until chicken is done.

Shred chicken and serve on whole wheat tortillas with avocado, black beans, mango salsa (tomatoes, garlic, mango, jalapeno, lime juice, and cilantro) hot sauce and brown rice on the side. 

*This time I threw in a few potatoes quartered and they turned out great. Kinda like chicken stew.

Freezer Breakfast Burrito's - OAMC

 
{Breakfast Burrito's - Make Ahead and Freeze!}

10 whole wheat tortillas
1/2 med onion, diced
2 medium/small potatoes, diced small
6 whole eggs
salt and pepper
Mexican blend cheese - about a tbsp per tortilla, go easy on the cheese

In a non-stick skillet drizzled with a little olive oil (tbsp or 2), sauté onions and potatoes until potatoes are done.

In a small bowl, beat eggs with salt and pepper.

Once potatoes are done, add in eggs and scramble. Fill each tortilla with about 1/3 cup mixture (I used a large cookie scoop) and top with cheese (optional). Roll up. Place on cookie sheet and freeze. Once frozen put them into a Ziploc freezer bag and freeze. To eat, microwave until heated through.

*You could easily make these with egg whites or half eggs and half egg whites if you wanted to lower the calories.

Happy 36th Birthday to ME!

Today is my 36th birthday and I have NEVER felt better in my own skin. I have worked hard on  my nutrition and made fitness a big part of my life. I have never been very consistent with staying in shape because I would fall off the wagon and not get back on for a year or so then I would start over and quit again. The classic yo-yo dieter. For a long time, I skipped meals and would eat a lot at night. I now realize how harmful that was on my metabolism because I am able to eat so much now and still maintain my weight loss. The challenge groups as a Beachbody Coach help me to be accountable and stay motivated each day. I always dreamed of a job where I would get paid to stay  in shape - BINGO! This is it! Winner winner chicken dinner. LOL!

Slow Cooker Cashew Chicken


Crockpot Cashew Chicken

 Ingredients:

 2.25 lbs boneless, skinless chicken thigh tenders or chicken breast tenders

 1/4 cup almond or Coconut flour

 1/2 tsp black pepper (a few twists of fresh pepper)

 1 Tbsp olive oil

 1/4 cup light soy sauce (I used Bragg’s Liquid Aminos)

 2 Tbsp rice wine vinegar

 2 Tbsp ketchup

 1 Tbsp coconut sugar (or brown sugar)

 2 garlic clove, minced or grated

 2-3 tsp grated fresh ginger

 1/4 tsp red pepper flakes

 1/2 cup cashews

 Directions:

 Combine flour and pepper in large Ziploc bag. Add chicken. Shake to coat with flour mixture. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken. Cook on LOW for 3 to 4 hours. Add cashews and stir. Serve over brown rice with steamed vegetables.  Makes 4-6 servings.

5 Week Before and After Progress with Focus T25


I am really blown away by the results I have achieved from this program, drinking Shakeology, focusing on clean eating most of the time (the meal plans I include make this so much easier) and plugging into my online support group daily. My new favorite! Having it again today  MMMMM This once a day meal replacement has really helped me to feel better and keep the weight off. I drink it EVERY day. 
  • 1/2 cup strong brewed chai tea (one bag per shake), cooled off
  • 1/2 cup almond milk, skim or rice milk
  • 1/2 frozen banana*
  • 1 scoop Vanilla Shakeology
  • Dash of nutmeg or cloves
  • Ice
  • Blend and enjoy the super-ness!

*Peel and freeze bananas in a ziploc bag. I break them into thirds or halves.
