Beachbody Combat Nutrition Guide Recipe - Spicy Tomato Lentil Soup

Spicy Tomato Lentil Soup

We made this simple recipe from the meal plan. It was easy enough and you can't go wrong with lentils and tomatoes!  I quadrupled the recipe, since the original recipe was for only 1 serving. These are my modifications to make a larger batch.

1 cup dried lentils (boiled in water for 25 minutes)
1 onion, chopped
2 cloves garlic, minced
1 large can crushed tomatoes
hot pepper flakes
2 bay leaves
3 Cups of vegetable broth

In a soup pot, sauté onion until golden. Add garlic, sauté for a few more minutes. Add tomatoes, hot pepper flakes, salt, broth and bay leaves. Simmer lightly for about 10 minutes. Serve with 1-2 tsp grated parmesan and hot pepper flakes
