Granola Recipe
This is an awesome Granola recipe thats great for using up all that Oatmeal you may have in your stockpile. You can also add raisins or dried fruit to it, but wait until after you bake it to do so.
Adapted from orangett.blogspot.com & Nigella Lawson’s Feast
Dry ingredients:
5 cups rolled oats
2 cups nuts ( almonds, peanuts, mixed – your preference)
1 cup hulled raw sunflower seeds
2-4 tbsp Flax seeds, lightly ground (I use the magic bullet)
¾ cup light brown sugar
2 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. sea salt or regular
Wet ingredients:
¾ cup unsweetened apple sauce
1/3 cup corn syrup
¼ cup honey
2 Tbsp. safflower oil, smart balance oil or vegetable oil
Preheat the oven to 300°F.
In a large bowl, combine all of the dry ingredients and mix well. Add the remaining wet ingredients and mix well to coat. Spread mixture into a large baking sheet.
Bake for 30 minutes, or until evenly golden brown. Stir every 10 minutes to help it cook evenly. When it’s ready, remove from the oven, stir well – this will keep it from cooling into a hard, solid sheet – and set aside to cool. The finished granola may still feel slightly soft when it comes out of the oven, but it will crisp as it cools.
Scoop cooled granola into to a large zipper-lock plastic bag or other airtight container. Store in the refrigerator indefinitely.
Yield: about 10 cups

This morning I saw the best news on tv! McDonalds is offering free coffee. I guess this is great news for you early risers. Not so great for us night owls ;). I think I will be getting out of the house much earlier in February for free coffee. Yummo! I am not sure if this is regional, so make sure to check your local McD's. Everyone always gets in the spirit of Fitness after the New Year, so I had to jump on the band wagon, although it took me a few weeks to get moving. So, I thought I would share my workout goals and what I am doing, since it has always worked so well in the past with keeping the weight off.
I try to go to the gym 3-4 times a week and do at least 30 min of cardio. I usually walk fast at a 5%-10% incline or do the elliptical. I also include weights into my workouts because the more muscle you have, the more fat your body will metabolize. I want to tone and not build muscle so I am doing lighter weights and high reps 12-15, 2-3 sets. Free weights are always better than the machines because you have to use balance and control the weights, but if you have to use the machines then its better than nothing at all. I just do not see results when I use the machines vs going into the free weight room.
I just started my workout regimen about 2 weeks ago, so I will just take it slow and steady through to Summertime. If you can only do 20 minutes of toning one day because your busy then just do that, its better than nothing.
