Breakfast Coconut Quinoa (keen'wa)

It's a keeper! I suggest making a few servings of quinoa to use again. You can use it on salads, in soups, or even in wraps to add more protein and nutrition. These little puppies are a powerhouse of nutrition. You HAVE to rinse them off with a fine mesh strainer before cooking.

1 cup cooked quinoa (cook according to bag.I use water.)
Tbsp chopped almonds
1/2 banana quartered and sliced
pinch or more of cinnamon
stevia or a tiny drizzle of honey
1/3 cup light coconut milk
tsp vanilla - optional, i forgot to add it

Clean Egg "Muffins"

Clean Egg "Muffins" made in muffin tins :) 


This is a very easy recipe using just eggs and vegetables, peppers, etc.

Fresh baby spinach
chopped bell peppers
chopped onions
6 whole eggs
1.5 egg whites (modifications: use more egg whites and less eggs, or all eggs with a little milk)
salt and pepper
hot sauce, optional

Directions: 
Spray Muffin tin with baking spray really well. Smush spinach into tins. Top with onions and peppers. 

In a small bowl combine eggs and egg whites, salt and pepper and hot sauce. Pour over veggie mixture. Bake at 375* for 20-25 min or until not jiggly in the middle.

To eat. Warm in microwave for 30 seconds. Place on toasted english muffin. One serving = 2 egg "muffins"

Slow Cooker Chicken Cacciatore

Crock Pot Chicken Cacciatore

I got this idea from the Beachbody TurboFire Nutrition guide and I tweaked it a little. It was great! We served it on whole wheat noodles. It is a keeper!

(This was my husbands plate...excuse the blurry pic.)

Package of boneless skinless chicken breast (threw them in frozen)
1 28 oz can diced tomatoes
3 garlic cloves, minced
1 onion, quartered
salt and pepper and a pinch of hot pepper flakes
zuchinni, sliced (i left this out because we didnt have any)
italian seasoning, just sprinkle a decent amount in there

Directions: Place all ingredients in slow cooker. Cook on low for 6-8 hours.

Boil whole wheat noodles, serve with fresh parm and hot pepper flakes with a salad on the side.

*I think it would be fabulous with fresh basil, but my plant is dying, so I will have to try it next time!

I am really excited to go to my very first Super Saturday today with my husband. I hear it's really a fun event because you workout and then hear exciting news from Beachbody about new products, policies, benefits, etc. I love this company. I love the excitement and the closeness of our Team! I am also really looking forward to growing my husbands belief in this business as well. I think now that my income has grown, he is really beginning to understand it more and support me in my new venture. I really think we could one day make this our sole income. But for now, its bringing in what I would make working part time and I can do it from home or from any where in the world. I get to help people achieve their dreams, change their lives and their families lives. It's incredible!
