Clean Egg "Muffins" made in muffin tins :)
This is a very easy recipe using just eggs and vegetables, peppers, etc.
Fresh baby spinach
chopped bell peppers
chopped onions
6 whole eggs
1.5 egg whites (modifications: use more egg whites and less eggs, or all eggs with a little milk)
salt and pepper
hot sauce, optional
Directions:
Spray Muffin tin with baking spray really well. Smush spinach into tins. Top with onions and peppers.
In a small bowl combine eggs and egg whites, salt and pepper and hot sauce. Pour over veggie mixture. Bake at 375* for 20-25 min or until not jiggly in the middle.
To eat. Warm in microwave for 30 seconds. Place on toasted english muffin. One serving = 2 egg "muffins"
