Easy Slow Cooker Healthy Shredded Mexican Chicken

I am all about easy meals. This is something you can whip up in a few minutes and be done. Ain't nobody got time for elaborate meals, right!? I know I sure don't. Try Greek yogurt in place of sour cream. It's good. Trust me ;)




Makes moist shredded chicken for taco's, taco salad, lettuce wraps and more

1 large package of boneless chicken breasts
1 large can of diced tomatoes, undrained
1 small can of green chilis, undrained
sprinkle chicken with cumin, chili powder, garlic powder, salt and pepper
1 cup frozen corn (add during last hour or 2 of cooking)
Whole wheat tortillas
1 can or cup of black beans, as a topping.

Place everything in slow cooker. Sprinkle chicken well with seasoning. You can always add more later. Cook on low for 6-8 hours or high 3-4 hours or until chicken is done.

Shred chicken and serve on whole wheat tortillas with avocado, black beans, mango salsa (tomatoes, garlic, mango, jalapeno, lime juice, and cilantro) hot sauce and brown rice on the side. 

*This time I threw in a few potatoes quartered and they turned out great. Kinda like chicken stew.
