Chicken and White Bean Soup
This dish is really simple. The hardest part is making the chicken. You could also buy a rotisserie chicken and use part of that to make the prep much faster.
Yields: 6 servings at approx 200 calories each serving
- 1 tbsp olive oil
- 1 large onion chopped
- 2-3 stalks celery, chopped
- 1 clove garlic, chopped (or 1 tsp prepared garlic)
- 1/4 tsp dried rosemary
- 1/4 tsp ground sage
- 1 32 oz carton low sodium chicken broth
- 1/4 tsp salt (u can add more later)
- 1/4 tsp black pepper
- 1.5 cups water
- approx 2 lbs (one package) of grilled or pan seared chicken breast, cut into cubes
- 1 can or 1.5 cups cooked white navy or cannellini beans, undrained
- Optional: pinch of crushed red pepper flakes.
Directions:
Saute onions in olive oil until opaque. Add seasonings and garlic for about 1 minute. Add broth, water, chicken and beans. Simmer for 15-20 minutes. Enjoy.
Makes a great healthy snack, lunch or dinner. This soup freezes well.
