Vegan Black Bean Fudgy Brownies with Quinoa and Oatmeal






Black Bean Fudgy Brownies
Yields 15 brownies

These turned out very moist and fudgy and more like a dessert than a brownie, but I love fudge brownies, so it’s a keeper. I will try next time to use stevia to lower the calorie content. Yields about 15 servings at an estimated 130 calories, 20 carbs, 5 grams of protein. Recipe can be made dairy free by using "Enjoy Life" chocolate chips. 

2 cans black beans, undrained
¾ cup uncooked oatmeal
¾ cup cooked quiona
4 tbsp agave nectar w a pinch of pure stevia (It was not quite sweet enough, so I suggest adding more stevia)
1 tsp vanilla
4 tbsp good cocoa powder
3 tbsp PB2 (powdered peanut butter - can be found in the organic section of the supermarket)
1/3 cup walnuts
1/3 – ½ Chocolate chips for the top (white chocolate bark was used in the photo because that's all we had)

Put everything except chocolate chips and walnuts into commercial blender like the Vitamix or Blendtec (ninja might work) or food processor and puree until smooth and creamy. Spray a 9*13 casserolle dish with baking spray. Spread pureed mixture into pan. Cook for 20-25 minutes.
