Turkey Taco Soup: leave out the turkey meat for a meatless meal

Easy Taco Soup Recipe 


I make this often and it's one of our favorites. It's extremely easy. Even my daughter who is 16 whipped it up for us the other night. It's really good! I love to have meatless meals at least once a week. Some people call it meatless Monday, but it doesnt always fall on Monday, so I don't know what to call it. Meatless Taco Soup Recipe

1 large onion, chopped
1 can re-fried beans, low fat or make your own
1/2 tsp salt
1/4 tsp pepper or a few twists
2 tsp cumin
1 tsp garlic powder
1 tsp Mexican oregano
2.5 cans vegetable stock, beef stock or chicken stock
1 can cannelloni beans
1 can black beans
1 can Rotel, mild
1 can diced tomatoes or stewed tomatoes cut up
1 can ranch style beans (aka chili beans) - or add chili powder
2 tbsp taco sauce (can use hot sauce- but it might be too spicy with the Rotel)
1 9 oz package frozen corn

For serving:
Brown rice, prepared
Baked Tortilla Chips
Greek Yogurt
Mexican Cheese

In a large pot, head 1 tbsp olive oil and saute onions until golden. Add refried beans and seasonings, tomatoes, taco sauce, rotel, broth or stock, and corn. Simmer on low for 20-30 minutes. DO NOT BURN IT.

Serve over a little brown rice and top with, Greek yogurt or sour cream and cheese. 

Freezes well and tastes even better the next day. For additional flavor, add some fresh cilantro.

Slow Cooker Option: For a quicker meal, brown 1 lb turkey meat with onions and freeze (I make this in double or triple batches for easy meals) To make this recipe, just thaw and place everything in the slow cooker.

Turkey Taco Soup Version:

Brown turkey with onion until cooked, add in remaining ingredients and simmer on low 20-30 minutes.  You may need to add another can of stock.
