Clean Apple Muffins

These were really tasty! I modified the original recipe, which can be found at The whole family enjoyed them. I would recommend having 2 as a serving for a breakfast meal, or 1 as a snack.
They are made with almond flour, ground oatmeal, maple syrup, egg whites and applesauce. 

Clean Apple Muffins

3 egg whites (9 tbsp)
1 cup unsweetened applesauce
1/4 cup maple syrup
2 tsp vanilla extract

1 Cup Almond Flour
1 Cup Oatmeal Flour (ground up Oatmeal)
1/2 tsp baking soda
1/2 tsp baking powder
1 tbsp cinnamon

Directions: Preheat oven to 350*.
In a small bowl combine, egg whites, vanilla, maple syrup, and applesauce.
In a larger bowl combine: almond flour, oat flour, baking soda and powder, and cinnamon.
Add wet ingredients to dry and stir until combined. Scoop into 12 lined muffin tins sprayed with baking spray. Bake 15-20 minutes or until golden and done (test with a toothpick).

* Next time I will add walnuts or pecans.
