So, please forgive my absence lately. I have been extremely busy with the kids missing the bus, and trying to hunt down groceries without paying full price *gasp*. My stockpile is already forming in my freezer and pantry, so I am finally feeling better about that. Our menu has consisted of a lot of sandwiches over the last 3 weeks. My husband was gone for 2 of them, and the kids seemed to like the sandwiches; it was easy, so we ate them often. To be honest, they were pretty delicious. The kids favorite was sourdough bread, salami (from the dollar store), swiss, lettuce and tomato. DELISH! This week my goal is to get back on a menu plan, so we can all start eating real food again.

Tenative Menu
- Oven Chicken and Rice
- Chicken Enchiladas with Green Chili Sauce (using prepared shredded chicken)
- Hamburgers (on the hubbys new grill - Im crossing my fingers he will not overcook them now)
- Slow Cooker Pot Roast
- Chicken and Dumplings (using prepared chicken and stock from boiling the chicken)
- Cowboy Stew
- Chili, Bean and Cheese Burritos aka Chilito's
- Grilled Pizza
