Healthy Split Pea Soup & Ham Soup - Pressure Cooker (InstaPot) Recipe
My family LOVED this soup. The hubby went completely gaga over it and let me tell you...it was SOOOOO easy to make. Like crazy easy! It has so much flavor too.

Ingredients
  • 1 tsp olive oil
  • 2 large carrots, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced or 2 tsp prepared minced garlic
  • 1 reduced sodium ham steak, diced 
  • 4 cups beef stock or broth
  • 2 cups water (or you can use 6 cups of water and 1 bullion cube or 1 tbsp better than bullion chicken or beef stock)
  • 1 lb dry green split peas, rinsed well
  • 1 bay leaf
  • a few twists fresh pepper

  • *salt goes in after you cook it - approx. 1 tsp salt (taste it then you can add more if you like)

    In a pressure cooker, place settings on saute; heat oil - Add onions and carrots and saute 4-5 minutes; add garlic saute a min or so more. Add ham, peas, stock & water or just water with the bullion, and bay leaf and bring to a boil. When the liquid boils, cover and lock the lid. Press cancel on the Instapot pressure cooker. Press soup and reduce time to 20 minutes. Allow the pressure cooker to naturally release the steam for about 10 minutes after it's done.

    Once done cooking, remove bay leaf, add a teaspoon of salt and enjoy! 

    *I put about 1/3 of the soup into a blender to make it creamer. This is optional.
    *Another variation would be to use all chicken stock or broth. It is very flexible.
