Protein Waffle Recipe ~ Cottage Cheese, Oatmeal & Eggs *SO EASY!


Serves 3
1/2 cup cottage cheese
2 eggs
1/2 cup water
2 teaspoon olive oil
1 teaspoon vanilla extract
1 1/3 cup oatmeal, regular
1 teaspoon baking powder
1/2 tsp baking soda 
Put everything in a blender and process until blended well.
In a food processor, blend cottage cheese, eggs, water, vanilla, and olive oil until smooth.
Heat waffle iron until hot. Spray with cooking spray. Pour in one third of the batter (if using a Belgium waffle maker you will need more) Cook until they are a little more golden and toasty. I prefer them to have a crunch vs being soft. 
Makes 3 waffles - 1 serving is 1 waffle
I love to top mine with a few thin slices of banana, a few chopped walnuts and 2 tablespoons of maple syrup.
