Menu Plan Monday 10/12 – 10/18

It's been a busy week. It seems we are all getting colds and spreading it around. I am thankful it has not been the flu, but its still dragging the kids and myself down a bit. We are having salad a lot this week because we received several types of salad and more greens with our CSA pick up this weekend. A CSA is basically a farm co-op where you buy shares of the harvest in advance and then pick up your portion every week. Check back later to see links to more recipes!



Sick Kid Monday - Chicken Noodle Soup with homemade noodles and Chicken Pot Pie

Tuesday – Spaghetti and Meatballs** with salad - we had Meatball Subs instead because Mommy felt like crud.

Wednesday – Easy Meatball Stroganoff **

Thursday – Leftovers

Friday – Philly Cheese steak sandwiches on sourdough baguettes (using shaved pork because that's what was on clearance) and German potato salad

Saturday - Potato Soup with Salad

Sunday – Meat Loaf, mashed potatoes and okra


** Make meatballs ahead of time bake in 350* oven for 30 minutes then place in freezer bags to store. I make about 5 lbs at a time, reserve the last lb and add tomato paste and a chopped green pepper to the remaining meat mix. Shape mix into small loaves for meat loaf, then you will have about 3 servings of meatballs and 2 servings of meatloaf depending on how much your household eats at each meal. I freeze the meatloaves on a cookie sheet then place all of them into the same bag and freeze again. To bake, thaw meatloaves in the fridge and bake @ 350 for 20 - 45 minutes, depending on the size of your loaves.
