Menu Plan Monday 10/26



Monday – Pork Stir Fry – Heat oil in large skillet add onions, peppers and sauté for a few minutes. Add cubed pork; Add Shredded carrots, (Slice 2 onions and 2 bell peppers. Place half of peppers and onions in a bag for Tuesday)


Tuesday – Chicken Fajita's (marinate chicken breasts with lime, garlic, adobo seasoning, salt and pepper and grill) with Bell peppers and onions, beans and rice


Wednesday – Meatballs * with Ikea Gradaas Cream Sauce, mashed potatoes and fresh green beans


Thursday – Tuscana Soup with Kale


Friday – Easy Taco Salad **


Saturday – Halloween - leftovers 


Sunday - Eggplant Lasagna

*Make meatballs ahead of time, take 5-6 (or more) pounds of ground beef and add bread crumbs, Worcestershire sauce, onions, garlic, salt, pepper, and eggs. Shape into small balls and line onto a cookie sheet; Bake in 350* oven for 30 minutes then place in freezer bags to store. To make meat loaves, reserve 1 to 2 pounds of the mix and add tomato paste and a chopped green pepper to the remaining meat mix. Shape mix into small loaves for meat loaf (small loaves cook faster). Freeze the meat loaves on a cookie sheet then place all of them into the same bag and freeze again (you will be able to take them out as needed). To bake, thaw meat loaves in the fridge or take meat directly from the freezer to the oven; bake @ 350 for 20 - 45 minutes, depending on the size of your loaves.









**Make this master meat mix ahead for taco's, enchiladas, spaghetti, lasagna, taco salad, taco dip, etc. Brown several pounds (4-6) of ground beef in a large pot; Drain fat. Add in chopped onions, and garlic; saute until onions are opaque. Add salt and pepper. Cool mixture, place in freezer bags, label and store in freezer until ready to use.
