Apple Crisp

I had a craving for something sweet without all the prep work that it takes to make an apple pie, so I decided to improvise and make a fruit crisp. It was a hit with the kids and the hubby. Serve with a scoop of ice cream to make it extra tasty! After making this the first time, I decided to double the recipe to make more since it dissapeared in a few minutes. If you want to double it, just double the crumb topping and add more apples.

Apple Crisp

4-6 apples, peeled and sliced thin
Can of lemon lime soda, optional (to soak the apples)
1 Cup Rolled Oats
1/2 cup brown sugar (dark or light)
1/4 cup flour
1 tsp salt
1 tsp cinnamon (plus extra for sprinkling the apples)
1/4 tsp nutmeg
1/4 cup butter or margerine (1/2 stick)
vanilla (about 1 tsp)

Place peeled apples into lemon lime soda to prevent browning, sprinkle with cinnamon and add a drizzle of vanilla; toss to coat.
Mix oats, brown sugar, flour, salt, cinnamon, and nutmeg; cut in butter until well combined.
When ready to bake, drain apples and place into a 9 * 9 baking dish; Sprinkle apples with crumb mixture. Bake @ 375 for 30 - 35 minutes.
Serve warm with vanilla ice cream.
