Healthy Chicken Salad


Try this easy chicken salad recipe. It's packed full of celery, apples, cranberries, and pecans and made with Greek yogurt, so it's better for the waistline and your health. This is a great recipe for meal prepping and planning. Make it on Sunday to have healthy clean lunches throughout the week. I like to eat it on a pita bread or ezekial bread with fresh spinach. It's easy to adjust the recipe to your liking as well. 

2 Cups chopped or cubed cooked chicken breast**
1/2-1  Cup Greek Yogurt (just enough to moisten)
1/8 cup Cranberries
1/3 cup Pecans, chopped
1-2 stalk Celery, chopped
1/8 red or yellow onion, chopped
1 green apple, chopped
salt, pepper and garlic powder - just a pinch of each
1-2 Tsp Dijon or regular mustard
a dash of stevia, agave, sugar or whatever sweetener you like

Combine all ingredients in a large bowl and stir to combine. Add more greek yogurt if needed. I add the salt and taste and add more if needed.  

**Boil chicken breasts in water for about 20 minutes or until fully cooked. Cool; chop or cube. You can make extra chicken and freeze for later use.
