Tomato Salad is great for using up your abundance of summer tomatoes. It is quick and easy and the best part...it tastes great!
2-3 Ripe Tomatoes
Drizzle of Olive Oil
1 clove Garlic, chopped or grated (prepared works fine)
Sea Salt
Splash of red wine or balsamic viniger
2-3 Basil Leaves, roll up and snip with kitchen shears
Slice tomatoes thinley and place in a serving dish. Grate garlic over tomatoes. Sprinkle with sea salt. Drizzle with olive oil and add a small splash of red wine or balsalmic vinigar. Add the basil leaves and toss tomatoes.
You can also add cucumbers and onions to make it even better. :)
