Menu Plan Monday 9/21 – 9/27



The weather is starting to get colder, so it's time to make soup! I choose my meals by what we have on hand and what veggies will go bad first. We participate in a CSA program where we get veggies every week. Sometimes this is great, but I am often grasping for ways to cook some of these strange veggies. This week we received Cabbage, Bok Choy, Kale, White Radishes, tomatoes, squash and chili peppers, so I will be trying to incorporate them all into my recipes this week. Monday – Chicken, Bok Choy, Zucchini, Carrots & Onions Stir Fry and rice

 
Tuesday – Crock-Pot Stuffed Cabbage Rolls with stewed tomatoes

 
Wednesday – Crock-Pot Pinto Beans and Rice Cooker Rice (put 1.5 cups rice in cooker, 3 cups water, hefty pinch salt or two, pepper, 2-3 tbsp olive oil and turn on) and Cornbread


Thursday – Homemade spinach and cheese tortellini

Friday –Tuscana Soup (Olive Garden Soup)

 
Saturday – Chicken N Dumplings


Sunday - Skillet Pork Chops, squash, steamed new potatoes (place potatoes in steamer bag with salt, pepper, parsley, thyme, grated garlic clove and cook in microwave for about 5-7 minutes)
