Baked Oatmeal To Go

Try this clean eating healthy oatmeal "muffin" recipe for a quick and easy breakfast you can grab as you head out the door for work. It's also great for busy mom's who just don't have time to make a healthy breakfast. Plus they make a nice snack for the kids, post workout or when you are in a pinch for a quick meal. 

I recommend using a silicone muffin tin for easy removal, but you can also use a metal or glass tin and spray with baking spray. You do not need to spray the silicone tin.






Baked Choco Banana Oatmeal To Go

3 Cups Old Fashioned Oatmeal, dry
2 eggs
1/4 cup wheat germ
1/4 cup ground flax seed or flax meal
1/4 cup mini chocolate chips
2 small ripe bananas
1 tsp salt
1/4 cup applesauce
Stevia, or sweetener of choice (I recommend the powder from a health food store. It comes with a tiny scoop. Use 6-7 tiny scoops)
1 tsp cinnamon
2 tsp vanilla extract
2 cups water

Preheat oven to 380*. In a large mixing bowl, combine all ingredients and stir well. Using a cookie scoop, fill cups about 3/4 of the way. Bake approx 20 minutes, or until toothpick comes out clean. 

Can be frozen and microwaved.
