Lemon Baked Chicken with Sweet Potatoes, Carrots and Onions
I threw this together last night and it turned out great. It's simple and delicious. The chicken was moist and tasted like a rotisserie chicken. The lemon was not all that dominant but just enough to give it extra flavor. It's a simple way to eat clean and healthy for those trying to lose weight or just live a healthier lifestyle. 2 bone in chicken breasts, skin removed
1 Mayer lemon, sliced thin (about 5 slices)
1-2 sweet potatoes and/or regular potatoes
4 whole carrots, peeled
1 clove garlic, whole
1 onion, quartered
About 2 tbsp olive oil drizzled on veggies and chicken
Salt, pepper, poultry seasoning, garlic powder, paprika, thyme, ground majoram, and lemon pepper seasoning (I just sprinkled all of these on the chicken breast)
Place lemons under chicken breast. Season chicken breast then drizzle with olive oil and rub on veggies and on the top of the chicken.
Bake at 350* for about 30-45 minutes or until chicken reaches 180* Remove and enjoy!
*You can easily add more veggies to this to make it go further.
