Simple Crock-Pot Split Pea Soup



I realize how gross this looks, but my husband swears it was the best Split Pea Soup he has possibly had. I am not a big fan of peas, but it was actually not bad. I have to confess - I did not eat it for dinner, but the kids did enjoy it. The soup is pretty thick in the photo (baby food consistency) but its easy to thin it out with water. It is a personal preference on how creamy or soupy you like it.

1 Bag Split Peas
1 Ham Knuckle
1 Can Chicken Broth
Water
Salt and Pepper
Pinch of Crushed Red Pepper
1 Small 4 oz Can of Evaporated Milk

Place peas, ham knuckle and chicken broth in Crock-Pot; Cover with enough water so peas are submerged about 1 inch. Add salt, pepper and crushed red pepper. Simmer on low for 4 hours; stirring occasionally. Place ham bone to the side. Use immersion blender to puree soup; add evaporated milk and puree again. Place cooker on Warm until ready to serve.
