Slow Cooker Beef and Butternut Squash Stew
Ingredients:
1 package lean beef stew meat, or lean stir fry cubed meat
1 medium onion, quartered in chunks
1 yellow pepper, cut in large chunks
1 red pepper, cut in large chunks
3 garlic cloves, grated or chopped
2 medium roma tomatoes, diced
1.5 cups beef stock
1 tsp sea salt
1/2 tsp ground pepper
1 hand full chopped flat leaf parsley
1 butternut squash, peeled & chopped cubes
2 new potatoes, quartered
Directions:
Place meat in slow cooker, add salt, pepper, onion, bell pepper, cloves, tomatoes, stock and parsley.
Cook on high for 4 hours (my slow cooker runs more hot than normal “high”, so it turned the peppers into mush- still super good though :)
Add butternut squash and potato one hour before serving.
Serve with 1/2 cup brown rice.

You could also cook on low, but I have not tested it out this way.
