Copy Cat Bonefish Grill Lemon Quinoa Recipe



My husband and I decided to go try out Bonefish Grill for our 13 year anniversary and were blown away by how fresh and delicious it was! I think we might even go back again today - it was that good!!! They have a side dish, Lemon Quinoa, and it was so good. I loved the colors and the flavors and the fact that it's really good for you. We decided to duplicate it at home. Sweet success! Worked like a charm!


This would be great to take to a BBQ for Memorial Day or any other occasion. You'll have a healthy option and look fancy too!

Copy Cat Bonefish Grill Lemon Quinoa Recipe
Ingredients:
1 cup red quinoa
1 cup edamame
1/4 red bell pepper
1/4 green bell pepper
1/4 tsp salt
1/3 zuchhini chopped
1 tbsp olive oil
1 tbsp (can add a little more) lemon juice
pinch pepper or fresh pepper
fresh thyme and basil for added flavor, optional

Boil 1 1/4 cup water. Add 1 cup of rinsed red quinoa "keen-wa" (rinse using a fine mesh strainer, do not skip this!) to boiling water. Cover and cook for 15 minutes.

In a large bowl, combine quinoa, 1 cup of edename beans, 1/4 chopped red bell pepper, 1/4 chopped green bell pepper, 1 tbsp olive oil, 2 tbsp lemon juice, 1/4 tsp salt, 1/3 of zuchinni chopped and pepper.  Stir well and refrigerate.

  4. Asked a chef at Bonefish for the ingredients for this just yesterday. Red quinoa, edamame, cucumber, red bell pepper, tomatoes, lemon juice, lime juice, salt and cilantro. Interestingly, there is no oil in Bonefish's version. Not that a tbp is much, but I specifically questioned if he'd forgotten to mention oil and the answer was "Nope... no oil in it". I'd imagine this recipe does come pretty close, but if you notice there's a little something not quite right, finely chop a 1/4 cup of cilantro and toss it in.
