Since tomorrow is Cinco de Mayo, I decided to whip up some Spanish fare.
You could easily double this. Yields approx 1 cup of dip.
- 1 ripe avocado
- 2 cloves garlic, minced
- 1/2 jalapeno, minced
- 1 heaping tbsp plain greek yogurt
- Juice from one small lime
- 1/4 tsp salt
- 1/2 tomato, chopped
In a small bowl, mash avocado. Add yogurt, lime juice, salt, jalapeno, and garlic; stir well. Add in tomatoes to combine. Enjoy!
