Healthy Pumpkin Breakfast Cookie



Pumpkin Pie Spice Breakfast Cookies


A great whole foods healthy breakfast cookie. The only downfall to this is trying to NOT eat them when you bake them. My goal is to freeze them and have them as a quick breakfast for the entire family to grab on their way out the door, but they are so GOOD that we keep eating them. Ha!


Dry Ingredients:
1 cup  whole wheat flour
2 cups old fashioned rolled oats http://ir-na.amazon-adsystem.com/e/ir?t=myw0c1-20&l=as2&o=1&a=B002TXT502
1/2 tsp salt
1/2 tsp baking powder
1 tsp pumpkin pie spice
½ tsp cinnamon

Wet Ingredients:
2 eggs
1 cup pureed pumpkin
1/3 cup maple syrup
1/2 cup unsweetened applesauce
1/4 cup coconut oil http://ir-na.amazon-adsystem.com/e/ir?t=myw0c1-20&l=as2&o=1&a=B001EO5Q64, melted
1 Tbsp Milk
1 Tbsp stevia or if you have the strong stevia from a Vitamin Store, use 3 tiny scoops.



Preheat oven to 350*. Combine dry ingredients in a large mixing bowl. Combine wet ingredients in a medium bowl. Whisk wet ingredients until well combined and stir into dry ingredients. Do not over mix. Drop by 2-3 Tbsp onto parchment paper or cookie sheet liner. Bake about 15 minutes.  

Yields around 20 cookies. 2 cookies = 1 serving. 

*They freeze and reheat well. I love them for breakfast. Microwave for 1 minute and enjoy!
