Beef Fajita's Recipe

This is the best recipe for beef fajita's. It stems from my dad, but I have modified it over the years. It is by far the tastiest fajita recipe to date.

1 Skirt Steak
3-4 Limes
Seasoning Salt (Shake on getting good coverage...this is the main seasoning and tenderizer)
2-3 tsp garlic
1 tsp pepper (sprinkle both sides lightly)
Adobo Seasoning (my favorite spice, just sprinkle lightly on both sides)

Place meat in a 9 * 13 casserolle or other dish that the meat can be marinated in. Squeeze the juice of 2 limes on one side and add seasoning salt, pepper, adobo seasoning, and garlic. Rub seasoning and lime juice into meat. Flip meat over and repeat. Cover meat and allow to marinate for at least 4 hours or overnight. Cook meat on a hot grill about 10 minutes on each side. Remove from grill. Cover with a foil tent for 5-10 minutes. Slice into strips and serve.

Tip: The smaller parts of the skirt steak will cook faster, so I recommend cutting the steak into 3 parts before placing it on the grill. This way you can easily remove the smaller ends when they are done while leaving the thicker middle piece on the grill to cook longer.
