Breakfast Coconut Quinoa


Breakfast Coconut Quinoa (keen'wa)

It's a keeper! I suggest making a few servings of quinoa to use again. You can use it on salads, in soups, or even in wraps to add more protein and nutrition. These little puppies are a powerhouse of nutrition. You HAVE to rinse them off with a fine mesh strainer before cooking.

1 cup cooked quinoa (cook according to bag.I use water.)
Tbsp chopped almonds
1/2 banana quartered and sliced
pinch or more of cinnamon
stevia or a tiny drizzle of honey
1/3 cup light coconut milk
tsp vanilla - optional, i forgot to add it
