German Potato Salad

My friend Katja taught me how to make German Potato Salad when we lived in Italy. Its very easy and tastes great! Double the recipe to make a larger batch. This recipe will serve four people.

Warm German Potato Salad

Yields approximately 4 servings

5- 6 Small Red potatoes, washed with skins on
1/3 cup white vinegar
1 1/2 tbsp olive oil
large pinch sugar
1/2 - 1 tsp regular salt
1/4 tsp garlic powder
Few twists of fresh pepper, or ground
1 small Cucumber, chopped fine (optional)
3 pieces of bacon, cooked and crumbled
2 green onions, snip finely
1/2 small red onion, chopped
In a large pot, bring water and 1 tbsp salt to boil; Drop in potatoes whole. Cook about 20 minutes or until barely fork tender. DO NOT over cook or they will be more like mashed potato salad. Drain in a strainer. Allow potatoes to cool. With a paring or small knife, cut the potatoes into small uneven chunks and slices. Just like if you were peeling something, but a little thicker. Add vinegar, olive oil, sugar, salt, pepper, cucumber, bacon, red onions and green onions; stir well. Serve immedietly or let salad sit at room temp for 30 minutes or refrigerate. Flavors get better the longer it sits. Serve warm or cold.
